Vibrant pea soup

Pea soup perfection. A stunningly simple recipe that can easily be adapted to suit your taste with the addition of garlic, chilli, or a splash of white wine. If you are longing for a taste of pea and ham soup you can crumble some vegan friendly bacon corn snacks on top before serving.

Two step soup, cooked within a few minutes, my go to recipe for a quick, healthy and delicious lunch.

Ingredients

 750 g Frozen petite pois
 1 Leek washed and finely sliced
 3 Sticks celery, washed and chopped
 1 Large handful of fresh basil
 1 pinch Himalayan pink salt - or any other table salt
 1 tsp Vegetable bouillon powder or veg stock powder
 1 dash Olive oil
 1 Bay leaf
 800 ml Water

Method

Gently fry the chopped leek and celery until softened (but not brown) with a dash of olive oil.

Add all the other ingredients and 800ml water to the pan.

Bring to the boil and then simmer for 5 minutes.

Remove the bay leaf.

Remove the pan from the heat and blend until smooth with either a hand blender or a liquidiser.

Your soup is ready! Enjoy with freshly made croutons or hot out of the oven walnut bread
