Tomato & Basil Soup

This is a great basic recipe, you can add more herbs, some chilli flakes, red peppers whatever you have in your larder. I add fresh rosemary as I throw that stuff in everything! Serve with fresh bread or homemade croutons.

Easy wholefood fresh tomato soup.

Ingredients - Serves 2 

 8 standard size tomatoes
 2 cloves of crushed garlic
 2 shalottes
 1 bunch basil
 1 tbsp olive oil
 1 tbsp fresh rosemary - optional
 1 tsp vegan vegetable stock powder
 1 pinch Himalayan pink salt or any table salt
 1 pinch ground black pepper
 1 tsp Sugar if tomatoes are very acidic and need sweetening
 1 cup water

Method

Peel and crush garlic, peel and half shalottes, slice tomatoes in two

Add oil to a saucepan and add all ingredients except the water, basil and stock powder

Cook on a medium heat until garlic and onions are soft.

Add water, stock powder and basil and simmer for 5 minutes.

Use a stick blender to liquidise or transfer to a high speed blender.

Your soup is ready! Drizzle over a little olive oil or vegan cream to serve.
